Romagnola Beef
The Romagnola beef is a finer grained beef.  This finer grained beef quality is similar to that found in the normal beef tenderloin.  As you know, the tenderloin is a very tender cut of meat that contains minimal fat yet tastes great.  This finer grained meat quality is what makes the beef more tender without having to have the massive amounts of fatty marbling tissue within the carcass.
The typical finished Romagnola beef carcass will produce a Yield Grade 2 while the Quality Grade is Choice and higher with little external fat covering.  Less external fat covering, means less waste as external fat is usually trimmed and discarded.

Quantity of Meat
Finished cattle will range in weight from approximately 1,000 to 1,200 pounds live weight.  Cattle tend to cut out between 60 - 65% yielding a carcass weight of 600—780 pounds of sellable (on the rail) beef product.  This will equate to approximately 15—20 cubic feet of cut, wrapped, and frozen beef ready for your freezer.  A typical carcass dependent upon how the beef is processed will yield 26 round steaks, 32 T-bone/New York steaks, 32 Rib steaks, 110—1-1/2 lb. packages of ground hamburger, 2 Rump roasts, 2 Pikes peak roasts, 7 Chuck roasts, 4 Arm roasts, with an additional variety of ribs, brisket, stew meat, and fillets.

Beef Cost
To purchase the above beef from a grocery store that carries HORMONE and ANTIBIOTIC free beef by the package ranging from $3.99 lb. for ground beef to $8.99 lb. for better cut steaks will cost the consumer in excess of $4,000 per carcass.
Here at 40CattleCo, we can offer you a guaranteed home grown HORMONE and ANTIBIOTIC free beef that is leaner and of top quality for the low price of $3.30 lb. when purchased in quantity by the 1/2 beef or by the whole beef.  A whole beef would cost as little as $1,980.
This results in a cost reduction for you the consumer in excess of $2,000.  ($4,000 - $1,980 = $2,020.)


Naturally Grown Beef
Our beef is naturally grown right here on the ranch located in the hills of the Ozark Mountains.  These cattle consume grasses native to this area from birth.  To finish the cattle, we supply a mix of corn and soybean meal to be consumed on a free choice basis in addition to the native grasses.  The only medication given to these cattle is a 7-way virus preventative injection given in the early calf stage to prevent death loss.  A pour on wormer is applied at weaning age and at the yearling  stage.
